There are nights when dinner feels like one more thing to get through…

This wasn’t planned.
I had been working all day, nothing thawed, and very little energy left to give.

But tucked in the freezer—scallops.

What followed wasn’t complicated. It was quiet, intuitive, and unexpectedly grounding. A hot pan. A simple sear. Garlic, onion, pasta… and a splash of orange juice that turned into something silky and bright.

Finished with cold butter, the sauce softened and came together in a way that felt complete.

Even more unexpected—my husband, who doesn’t like scallops, took a bite, paused, and said,
“damn.”

And that was the moment.

Not because it was impressive, but because it was present.

Golden Scallops with Warm Orange Butter & Garlic Pasta

What you’ll need (loosely):

  • Scallops (thawed and patted very dry)

  • Pasta

  • Garlic + onion

  • Cheese (parmesan or similar)

  • A splash of orange juice

  • Butter

  • Salt + pepper

How it comes together:

Bring a pot of salted water to a boil and cook your pasta. Before draining, save a small cup of the pasta water.

In a pan, gently cook chopped onion and garlic in butter or oil until soft and fragrant.

Add the cooked pasta directly into the pan along with a handful of cheese and a splash of the reserved pasta water. Let it become silky and lightly coated.

In a separate hot pan, sear the scallops until golden on each side. Remove them briefly.

In that same pan, add a small splash of orange juice and let it reduce slightly. Turn off the heat and stir in cold butter, allowing the sauce to become smooth and glossy.

Return the scallops to the pan, spoon the sauce over them, and place on top of the pasta.
